
Agave & Azul opened in 2025 at The Komu hotel on Jl. Pantai Berawa, describing itself as a taqueria and tequileria. The menu comes from Andri Dionysius, chef-patron of MDA Restaurants, the group behind Aged & Butchered in Jakarta and Bali. The room has hacienda-style terracotta brick, stained glass and hanging dried corn.
Tacos come on handmade blue-corn or soft flour tortillas, with slow-braised meats and cuts rarely seen in Bali, such as corazón (beef heart), tripas and oreja (pig's ear). Beyond tacos, look for the snapper ceviche with ají rocoto leche de tigre, grilled octopus with ají amarillo on grits, cochinita riblets in Yucatecan recado with orange-habanero salsa, and oxtail braised in mole negro.
The bar focuses on tequila, with seven house infusions, agave cocktails, frozen margarita slushies and a cinnamon horchata cocktail. It suits a dinner date or drinks with friends, and stays open until 12.30am at weekends.
