
Carbón sits on the 11th floor of MD Place in Setiabudi, with views over the Kuningan skyline. Chef patron Andri Dionysius cooks over a live-fire grill in full view of diners, drawing mainly on Mexico with Peruvian accents. The brand opened a second restaurant, in Ubud, in September 2026.
Much of the menu reads as modern Mexican. Build-your-own tacos come with handmade maize tortillas and fillings such as confit lamb carnitas served three ways and Nashville-style soft-shell crab. Other plates include duck breast al pastor in achiote and pineapple, blackened wagyu tongue with green mojo and tomatillo salsa, halibut with pozole, rambutan-wood-smoked quail asada and crab infladitas in puffed corn shells. Dessert is chuddos, a churro-doughnut hybrid with cajeta. An infused-tequila counter serves cocktails and a house tropical IPA.
Carbón suits a date, a special dinner or entertaining clients. It serves lunch and dinner on weekdays and runs straight through at weekends. Call ahead to book.
