Huevos

Huevos began as an online business in 2019, set up by friends Aaron Poh, Aloysius Chan and Nathaniel Moi, and opened this North Bridge Road shophouse near Kampong Glam in 2021. A masked Mexican wrestler fronts the brand, and the room is decorated with dragon murals and papel picado-style streamers.

Tacos are the main draw. The Baja fish taco with crisp battered fish and mango salsa is the usual first order, followed by birria beef tacos, chorizo pork quesadillas and a vegetarian mushroom quesadilla. Loaded nachos come piled with toppings, and churros round things off. To drink, there are frozen margaritas and a michelada mixed with Clamato, tamarind and agave honey; a liquid buffet of house pours, beers and frozen margaritas has also been offered.

Expect queues at peak times, so book ahead or arrive early, and note there is a one-hour dining limit. It is closed on Mondays. A second outlet operates in River Valley at New Bahru, 46 Kim Yam Road.
